Welcome back to day two of trying to find the best potato salad to bring to my next bbq.
“A hot potato salad? Are you crazy?” is probably what you’re asking yourself. And I get it, I really do. This is one of those moments, I need you to trust me on this. This potato salad is delicious and easy to make.
Besides being served warm, it has a delicious bacon vinaigrette dressing. Hot German Potato Salad is something you ought put out at your next BBQ.
Ingredients:
2 lbs Red or Gold potatoes
Dressing:
⅓ lb Bacon
1 large Red Onion, chopped
⅓ cup ml Apple Cider Vinegar
3 tbsp Sugar
3 tsp Dijon Mustard
1 tsp Salt
1-2 tbsp Chives, chopped
1 tbsp Parsley, chopped
How to:
Wash potatoes. Place them in a large pot. Fill pot with cold water, season water as if you were cooking pasta. Bring to a boil until a fork can easily poke a larger potato.
While Potatoes are cooking, cook bacon until crispy.
Keep about 2tbsp of bacon fat in the skillet, turn down the heat to low-medium-low and proceed to fry onions until translucent.
Turn off the heat. Mix in apple cider vinegar, sugar, dijon and salt. Make sure it’s all mixed in well together.
Once potatoes are tender, drain them and slice them into round thins.
Toss sliced potatoes with vinaigrette and top with chopped herbs.
Serve warm and enjoy.
