Let me preface by saying this Southern Sweet Corn on the Cob combines some of the flavors of creamed corn with a hit of spicy-sweet flavor. This is the perfect pairing for my Nashville Hot Honey (baked) Chicken recipe.
This corn was inspired and created for the 8-course Taylor Swift Era’s themed dinner party I through recently. For Swifties: this was part of the plate for the country era. Inspired by Taylor’s first three albums: Taylor Swift, Speak Now, and Fearless. What is more country than a delicious corn-on-the-cob?
First things first: Shuck the Corn
This may be second nature if you’re like me and grew up shucking corn. However, if you get pre-shucked corn, you can skip this step and get right into the recipe.
Peel off only the outermost leaves. Leave a thin layer of leaves.
Peel back the leaves at the tip of the Cob just enough so you can see 3-4 rows of kernels.
Now it’s time to ‘zipper’ the corn. Grab the top of the leaves and tassel, and pull them down together in one smooth motion. Don’t rip them off the bottom yet.
Continue around the corn until it’s done.
Now break off all the leaves, silk, etc. Run your fingers along the Cob and pick out any loose silk threads.
Do your best. Inevitably, silk threads are always left - this is part of the charm of eating corn on the Cob!
Congratulations! You’ve shucked an ear/s of corn! Now it’s time to get to the good stuff!

Southern Sweet Corn on the Cob
Prep time: 15 mins
Cook time: 20 mins
Ingredients
6-8 Sweet Corn on the Cob, cut in half
1 1/2 cups whole milk
1/2 cup heavy cream or half-half
1 stick unsalted butter
3 tbsp honey
1/4 cup Cajun seasoning
1 tsp cayenne pepper
salt & pepper
Garnish: Parsley, Honey, Cajun seasoning
Place all ingredients except garnishes into a large pot on low heat. Add water until the pot is a bit over half full.
Once all butter has melted, and the liquid mixture is warm, increase heat to medium-low to bring corn to a slow simmer for 15 minutes. We do not want the corn to boil.
Remove corn from the pot. Garnish with fresh chopped parsley, a dash of cajun seasoning, and a drizzle of honey.
